No one wants to appear on the restaurant health inspection report. Without taking proper preventative steps, restaurants and food service facilities could see themselves on it. Here are a few areas that most restaurants fail on their health inspection report.
Food Surfaces
Make sure all areas that come in contact with food are cleaned and sanitized
Do not allow food to sit on counters or shelves in open containers
Clean up food spills immediately
Never store food on the floor – always lift up shelves so rodents do not have easy access
Equipment
Make sure equipment is in good working order, easy to clean and not damaged. Make sure to resurface or discard cutting boards as they become scratched and calibrate thermometers properly.
Physical Building Facilities
Seal up any cracks and holes outside the building or faults in the structure, especially areas where pipes and utilities enter
Keep tree branches and shrubs trimmed
Make sure vents are screened and gaps around windows and doors are sealed
Nonfood Surfaces
Make sure non food surfaces (bottom of pants to floors) are kept clean so there is not an accumulation of soil that can contaminate food.
Employee Handwashing
Make sure sinks are easy to access and not blocked
Always make sure they are stocked with soap and paper towels.
Make sure the handwashing signage is posted
National Pest Management Association recommends that restaurants and food service facilities implement an integrated pest management (IPM) program. IPM is a process involving common sense and sound solutions for treating and controlling pests. These solutions incorporate three basic steps: 1) inspection, 2) identification and 3) treatment.
